Heirloom Cookshop: "What Is This Place?"


The doors have been open at the Cookshop for just about 3 months now, and we've been hearing one question pretty regularly from new visitors, so we thought we'd address it here. At least once a day, an inquisitive new friend walks in the door and says, "Hi! What is this place?"

The Cookshop is many things. First and foremost, it is a collaborative hub that brings food artisans, chefs, and farmers to the Snoqualmie Valley. We feed, nourish, teach, and sell food we love to eat! We look to support and source local PNW food artisans and bring them all together inside this beautiful historic building! Here are a few shouts out....

We have Chapin Smith, aka Wild Belly Sourdough, our

amazing in-house sourdough bread baker, who is always happy to chat about botany and foraging for wild yeast. We have Sweet Lo's Ice Cream, small-batch, from-scratch, hand-packed pints of the best ice cream you've ever had, made in Seattle by a team of remarkable women. We have delicious Pine Drop coffee, roasted in Seattle by RJ Dulay, who lives right in Snoqualmie. We have Alison Leber, from Table to Palate Cheese Shop, who sets up a "Roving Cheese Shop" of international cheeses some Saturdays right here at the shop; and our lovely Brenda Devore of Squirl Girl Biscotti. And then we have Chef Schu, the chef and owner of Heirloom Cookshop, artisan matchmaker, food gatherer, soup whisperer, leading our team in making salads, soups, sandwiches, and so much more.

The Cookshop is open Tuesday through Friday from 9:30 until 4:00 and Saturday for brunch from 9:30 until 1:00, during which time you can stop in and grab food to go or sit and join us for a meal with table service. We have hot soups on the stove and sometimes grilled cheese on Wild Belly Sourdough with seasonal jam. We offer greens salads, grain salads, vegan, and vegetarian options as well. The menu is ever-changing based on what's in season and what's growing in the fields at the local farms we work with, including the Snoqualmie Valley Farmers Cooperative, Snoqualmie Valley Cattle Company, Sweet Harvest Farm, Steel Wheel Farm, Skagit River Ranch, Oxbow Farm, One Leaf Farm, Sno-Valley Tilth, and so many more!

Saturday is brunch day, and the menu includes breakfast burritos, pastries, quiche, and more. Chef Schu posts her menu daily on Facebook and Instagram, so you can plan ahead. Local beer from Snoqualmie Brewery and Dru Bru and local wine from Pearl & Stone, as well as a rotating list of other wines, are always available for purchase to accompany your meal or to bring home.

During quiet moments, you'll find us working on fun DIY side projects, such as making preserved lemons or homemade yogurt. And we always have certain staples available for purchase, such as fennel-salt croutons, butter bean hummus, vegan coconut granola, sea-salted dark chocolate cookies, and frozen cookie dough.

If you're in the market for gifts, we stock an assortment of Chef Schu's favorites from around the world, including Maldon sea salt, Sherry vinegar and Olive oil from Spain, black cherry preserves and sparkling rosé from France, the cutest and most delicious goat milk caramels from Big Picture Farm in Vermont, whole-bean Stumptown coffee and Secret Aardvark hot sauce from Portland, Opinel cheese knives from France, gorgeous Timber & Trestle wood cutting boards, and lots more. Come in and build a beautiful gift basket for someone special (perhaps yourself)!

Thursday evenings bring cooking classes. So far Chef's taught us how to make soups and stocks, tamales, and harvest dishes, including some delicious Thanksgiving sides. Classes are sold out through the end of the year, but keep an eye on the website for our 2018 offerings. We're planning to bring in guest chefs who will teach their crafts ....everything from bread baking to pasta making to macarons to mole.

Chef dinners will eventually be happening on a monthly basis -- you may have seen photos of the epic evening that was Friendsgiving 2017, the inaugural chef dinner at the Cookshop. The next dinners are scheduled for February 17th and March 3rd, though we may try to sneak one onto the calendar for January as well.

The Cookshop is also available as an event space in the evenings. Come in and chat if you're planning a special event -- perhaps a birthday celebration private cooking class or a 5-course sit-down dinner. The space is so cozy and beautiful at night, the perfect setting to celebrate something amazing.
