Smoked Fingerlings with Stout Crème Fraiche, PNW Salmon, and Clovers

Course II

Verde Tagliatelle with Corned Beef Ragu, Grain Mustard Béchamel, and Frazzled Shallot

Course III

Potato, Acorn Squash, and Carrots with Yogurt, Hazelnuts, and Black Currants

Course IV

Roasted Brussels Sprout with Pork Belly (optional) Honey Cherry Bomb Sauce, Bacon, and Lemon Zest

Bomber Cheese Plate, House Pickles, Soda Bread Crackers, House Mustard
